How does one decline Morpheus?

Serenus

legātus armisonus
Morpheu.

If I recall correctly, Greek names of this kind generally retain the Greek vocative in Latin poetry (Μορφεῦ in this case).

All the grammars like Bennett's New Latin Grammar, Allen and Greenough's, Gildersleeve's, etc. have sections on greek nouns and are available online.

Serenus

legātus armisonus
What Dantius said. Note that you don't just want the way Greek nouns decline in Greek, you want to know the way Latin speakers adapted those declensions into Latin when writing in Latin, and grammars such as Allen and Greenough's and Bennett's do discuss this.
