Life is the art of drawing without an eraser

Not exactly what you're after but it might work. It's likely a tad ungrammatical so wait for a latinist to pop by and offer a translation.

Vita artificium scribendi sine errato est.

The difficulty here is the word "eraser", for which there is no Latin equivalent, though I suppose a neo-Latin word may have been invented at some point that I don't know about.

I would provisionally suggest:

Vita est ars ita describendi ut nullam lineam eradere liceat, "Life is the art of drawing without being allowed to erase a line."
