animum advorte nunciam tu quae volo accurarier

Probably a silly question but why does he use tu rather than te?

Because it's the subject of advorte, not of accurarier. Note that accurarier is passive and its subject is quae (neuter plural) so te wouldn't make sense in the acc.-inf. clause. Neither would it make sense as the object of advorte.

Thanks :) I was taking it as either the object of advorte or following nunciam (tibi)

Were you taking nunciam for a verb? It's an adverb meaning "at once", "(right) now", "quick"... (nunc + iam).
