There's actually a kind of muffin, popular here, called "Morning Glory". It has seeds and raisins and coconut and other stuff. Sort of a trail mix muffin, and it's delicious.

No, I'm not making this up. And get your mind out of the gutter, now. :p

I'm sure I did once consider carrot cake as odd, but having got used to eating cakes made substantially out of potato flour I've entirely conquered any reservations I may have had there. If people are content to consume animal collagen (in the form of gelatine) in their desserts, it does seem odd that the presence of a root vegetable in their cake is considered more unappetizing.
